Gumbo is what happens when good things come together and become something new and delicious. It was created in New Orleans, a city that itself is a combination of French, African, and Carribean roots. To make a good gumbo, you start with a roux as dark as you can make it, and add ingredients. Shrimp, sausage, chicken, crab - whatever you have can be thrown in. If you do it right and take the time with your roux, it will be delicious. Gumbo is my specialty. It's also a philosophy. Take different ingredients in whatever combination you have handy, add your own special sauce, and create something delicious and new. |
